Why this works

A protein-rich, low-carbohydrate breakfast bake that is filling but relatively high in saturated fat and sodium due to the ham, cheddar and added salt.

High-quality protein. Eggs, ham and cheddar provide a substantial amount of protein, which supports satiety and muscle maintenance.

Calcium and vitamin B12. Cheddar contributes calcium for bone health, while eggs and ham provide vitamin B12 for red blood cell and nerve function.

Sodium and saturated fat are notable. Cooked ham, cheddar, margarine and the added salt push sodium and saturated fat higher than ideal for frequent meals.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4). Grease a medium baking dish with the margarine.
  2. Slice the cooked ham and sweet peppers into bite-sized pieces, then scatter them evenly over the base of the dish.
  3. Beat the eggs in a bowl with the salt and black pepper, then pour the egg mixture over the ham and peppers.
  4. Sprinkle the mature Cheddar cheese evenly over the top.
  5. Bake for 25–30 minutes, until the eggs are set and the cheese is golden. Leave to stand for a few minutes before cutting into portions.
