Why this works
Very low in fat and protein, but quite sugary per serving due to the added caster sugar.
Vitamin C from lemons. Lemon contributes vitamin C, which supports immune function and helps with collagen formation.
Hydration with electrolytes. Coconut water provides fluid plus small amounts of potassium and other electrolytes, though the exact potassium content varies.
Added sugar is the main concern. Most of the carbohydrate and sugar comes from caster sugar, making this a sweeter dessert rather than a low-sugar option.
Method
- Combine coconut water with lemon juice and a little sugar in a jug.
- Pour into a shallow freezer-safe container and freeze until starting to set.
- Stir with a fork every 30 minutes until the mixture becomes icy and scoopable.
- Serve in chilled glasses or bowls.
