Why this works

A flavourful, energy-dense skillet dish that is relatively high in saturated fat and sodium due to the chorizo, but also provides a useful serving of vegetables and fibre.

Vitamin C from peppers and citrus. The bell pepper, green pepper, lime and orange provide vitamin C, which supports immune function and helps with iron absorption.

Fibre and prebiotics. Leeks, onion and garlic add fibre and prebiotic compounds that support digestive health.

High sodium and saturated fat. Chorizo contributes a substantial amount of sodium and saturated fat, so this dish is best enjoyed in moderation if heart health is a priority.

Method

  1. Heat the cooking oil in a large frying pan over a medium-high heat.
  2. Add the chorizo and cook for 2-3 minutes until it starts to release its oils and crisp lightly.
  3. Stir in the sliced leeks, red onion, bell pepper, green pepper and garlic, then cook for 6-8 minutes, stirring often, until softened and lightly caramelised.
  4. Grate in a little orange zest, then squeeze in the orange juice and lime juice and let everything bubble for 1-2 minutes until glossy.
  5. Taste and adjust the seasoning if needed, then serve straight away while hot.
