Why this works
A fairly energy-dense snack with moderate fat and sodium, and relatively low fibre and protein.
Pickles add sodium. The jarred pickles are likely the main source of sodium here, so this dish may be less suitable for those watching salt intake.
Some vitamin C from peppers. The fresh pepper contributes a modest amount of vitamin C and plant compounds, although the small portion limits the overall amount.
Low fibre overall. Despite the vegetables, the recipe is still quite low in fibre because the tortillas and spreads dominate the portion.
Method
- Finely chop the pickles, peppers, and onion.
- Mix the chopped ingredients with mayonnaise and spread until well combined.
- Spread the mixture over the tortillas in an even layer.
- Roll up tightly, then slice into bite-sized pieces.
- Chill for 5 minutes before serving, if you have time.
