Why this works

A filling, energy-dense baked dish with a good protein content, but relatively high in saturated fat and sodium due to the bread and cheese.

Calcium and protein. Cheese provides a meaningful amount of calcium for bone health, alongside protein to support satiety and tissue maintenance.

Tomato and onion antioxidants. Tomatoes, onion and garlic contribute vitamin C, polyphenols and other antioxidant compounds, though portions are modest.

Sodium and saturated fat. Cheese likely makes this dish comparatively high in salt and saturated fat, which may be a concern if eaten often.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Cut the bread into thick slices or chunks and arrange in a small baking dish.
  3. Add the tomatoes, onion, garlic, olive oil, dried mixed herbs, and black pepper to a pan. Cook over a medium heat until softened and lightly saucy.
  4. Spoon the tomato mixture over the bread, making sure it soaks in a little.
  5. Scatter the cheese evenly over the top.
  6. Bake for 12-15 minutes, until the cheese is melted and golden and the bread is crisp at the edges.
  7. Serve immediately while hot and bubbling.
