Why this works
A protein-rich, relatively low-carbohydrate dish with moderate calories and a higher saturated fat content from butter and eggs.
High-quality protein. Eggs provide complete protein, supporting muscle maintenance and satiety.
Rich in micronutrients. Tomatoes contribute vitamin C, potassium and lycopene, an antioxidant associated with heart health.
Higher saturated fat. Butter and egg yolks raise saturated fat, so this is best enjoyed in moderation if cholesterol or heart health is a concern.
Method
- Melt the butter in a frying pan over a medium heat.
- Add the tomatoes and cook for 5-6 minutes until they begin to collapse and release their juices.
- Push the tomatoes to one side of the pan and crack in the eggs.
- Cook until the eggs are done to your liking, then finish with a few drops of hot sauce and serve immediately.
