Why this works
A rich, energy-dense bake with a good protein content, but it is high in saturated fat and sodium, so best enjoyed occasionally rather than as an everyday dish.
Calcium-rich. Cheddar and milk provide a substantial amount of calcium, supporting bone health.
Vegetable contribution. Cauliflower adds fibre, vitamin C and some folate, though the recipe remains relatively low in vegetables overall.
Higher saturated fat and salt. Cheddar, butter and added salt push saturated fat and sodium up considerably, which may be a concern for heart health.
Method
- Heat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
- Cut the cauliflower into small florets and boil for 8-10 minutes until just tender. Drain well and set aside.
- Make a batter by whisking 150g plain flour with 300ml milk until smooth. Melt 20g butter and whisk it into the batter. Leave to rest for 10 minutes.
- Lightly butter a frying pan with 10g butter and cook 4 thin pancakes, using a quarter of the batter for each one. Cook each pancake for about 1-2 minutes per side until lightly golden.
- Melt 30g butter in a saucepan, stir in 30g plain flour and cook for 1 minute. Gradually whisk in 300ml milk to make a smooth white sauce.
- Simmer the sauce for 3-4 minutes until thickened, then stir in 150g grated cheddar until melted.
- Place a pancake in a buttered baking dish, spoon over some cheese sauce and a layer of cauliflower, then repeat with the remaining pancakes, sauce and cauliflower.
- Scatter the remaining 50g cheddar over the top and bake at 190°C (Fan 170°C, 374°F, Gas Mark 5) for 15 minutes until bubbling and lightly golden.
- Leave to stand for 5 minutes before serving.
